Elevate beef burgers with crisp veggies and zesty chili mayo.
Ingredients:
  • 750g beef mince
  • 2 tsp finely grated fresh ginger
  • 3 garlic cloves, crushed
  • 60ml (1/4 cup) hoisin sauce
  • 31.50 gm soy sauce
  • 18.20 gm peanut oil
  • 1 small carrot, peeled, cut into matchsticks
  • 1 small red capsicum, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 100g sugar snap peas, thinly sliced
  • 60ml (1/4 cup) whole egg mayonnaise
  • 3 tsp sriracha chilli sauce
  • 4 whole grain bread rolls, split, warmed
  • Micro herbs, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan forced. In a bowl, mix together beef, ginger, most of the garlic, 2 tablespoons of hoisin sauce, and 2 teaspoons of soy sauce. Season the mixture and shape it into four 2.5 - 3 cm thick patties. Heat a large frying pan over medium-high heat, spray with oil, and cook the patties for 2 minutes on each side until browned. Transfer the browned patties to a lined tray, brush them with the remaining 2 teaspoons of hoisin sauce, and bake for 12-14 minutes or until just cooked through. Let the patties rest for 5 minutes before serving.
  • Heat peanut oil in a large frying pan over medium-high heat. Add carrot, capsicum, onion, sugar snap peas, and remaining garlic. Sauté for 1-2 minutes until vegetables are tender-crisp. Stir in remaining hoisin sauce and soy sauce until well combined. Set aside.
  • In a bowl, mix together mayonnaise and chili sauce. Place a patty on the bottom of each roll, then drizzle with the mayonnaise mixture. Top with vegetable mixture, herbs, and the other half of the roll.
