Try a light, nutritious twist on classic beef stir fry.
Ingredients:
  • 89.10 gm hoisin sauce
  • 20.00 ml shao hsing (Chinese cooking wine)
  • 3cm piece fresh ginger, peeled, finely grated
  • 500g beef rump steak, thinly sliced
  • 18.40 gm vegetable oil
  • 1 red onion, cut into thin wedges
  • 400g broccoli, cut into small florets
  • 1 red capsicum, thinly sliced
  • steamed jasmine rice, to serve
Instructions:
  • In a bowl, mix hoisin sauce, shao hsing wine, ginger, and garlic. Place beef in a glass or ceramic bowl and add half of the sauce mixture. Toss to coat the beef, then cover with plastic wrap and refrigerate for 1 hour, if possible.
  • Heat a wok over high heat with half of the oil. Stir-fry beef in batches for 2 to 3 minutes until cooked. Transfer beef to a bowl and wipe the wok clean with a paper towel.
  • Heat the remaining oil in a wok over high heat, swirling to coat. Add the onion and stir-fry for 1 minute until softened. Next, add the broccoli and capsicum, stir-frying for 2 minutes until just tender. Then, return the beef to the wok and add the remaining sauce mixture, stirring for 1 minute until heated through. Serve with jasmine rice.
