Try this quick and flavorful beef and cashew stir-fry for a simple weeknight dinner.
Ingredients:
  • 36.40 gm peanut oil
  • 750g Beef Rump Steak, thinly sliced
  • 2 spring onions, thinly sliced
  • 150g snow peas, trimmed
  • 1 bunch choy sum, coarsely chopped
  • 80g bean sprout
  • 75g cashew
  • 80ml hoisin sauce
  • Steamed jasmine rice, to serve
  • Thinly sliced red chilli, to serve (optional)
  • Lime wedges, to serve
Instructions:
  • In a large frying pan or wok over high heat, sizzle the beef in hot oil for about 5 minutes until beautifully browned and fully cooked. Plate and set aside.
  • Add vibrant spring onions and crisp snow peas to the sizzling pan. Stir-fry for 1-2 minutes until they are just tender.
  • Toss choy sum and bean sprouts in the pan or wok. Stir-fry for 30 seconds or until choy sum wilts.
  • Add the beef back to the pan or wok along with the cashews, hoisin sauce, and garlic. Stir-fry for 30 seconds until everything is heated through.
  • Transfer the stir-fried rice mixture onto individual serving plates. Sprinkle with chili and garnish with lime wedges before serving.
