Decadent apricot kugel with egg noodles, cottage cheese, preserves, and Cheddar cheese topping - perfect for holidays or brunch.
Ingredients:
  • 1 (16 ounce) package wide egg noodles
  • 1 (18 ounce) jar apricot preserves (such as SMUCKER'S® Apricot Preserves)
  • 6 eggs, beaten
  • 1 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 (16 ounce) container cottage cheese
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375°F (190°C) and generously grease a 9x12 inch baking dish.
  • Boil a generous pot of lightly salted water. Cook egg noodles for 8 to 10 minutes, or until al dente. Drain noodles.
  • Combine apricot preserves, eggs, butter, sugar, vanilla extract, and salt in a large bowl, mixing well. Gently fold in cottage cheese and noodles before transferring the mixture into the baking dish.
  • - Bake the kugel until the center is cooked and set, about 50 minutes. - Top with Cheddar cheese and bake until browned and bubbling, about 10 minutes. - Allow the kugel to rest for 10 minutes before serving.
