Spicy muffins using Betty Crocker® mix topped with pepper jelly - ideal for holiday gatherings.
Ingredients:
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 1/3 cup milk
  • 2 tablespoons margarine or butter, melted
  • 1 egg
  • 2 tablespoons canned chopped green chilies
  • About 3 tablespoons red hot pepper or green jalapeño pepper jelly
Instructions:
  • Preheat the oven to 400°. Line 15 small muffin cups (1 3/4x1 inch) with mini-muffin paper baking cups.
  • Follow the package instructions to prepare the muffin mix with milk, margarine, and egg. Gently fold in chilies. Spoon batter equally into muffin cups and add 1/4 teaspoon jelly on top of each, pressing it lightly into the batter.
  • Bake until golden brown, then promptly remove from the pan. Add a touch of 1/4 teaspoon jelly on top of each muffin and serve warm.
