Homemade Chicken Fajitas

Make flavorful chicken fajitas with homemade seasoning using common spices from your pantry.
Ingredients:
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon garlic powder
  • 1.5 pounds skinless, boneless chicken breast, cut into strips
  • 4 tablespoons olive oil, or more as needed
  • 2 bell peppers, sliced
  • 1 onion, thinly sliced
  • 8 (6 inch) flour tortillas
Instructions:
  • Combine chili powder, paprika, salt, pepper, cayenne pepper, and garlic powder in a small bowl and whisk to create a flavorful fajita seasoning.
  • Prepare the chicken by removing any excess fat and placing it in a large bowl with a lid. Drizzle 2 tablespoons of olive oil over the chicken and sprinkle about 3/4 of the fajita seasoning on top. Mix well, adding more oil if needed, until the chicken is fully coated. Use a knife to poke holes in the chicken to help the seasoning and oil penetrate. Cover the bowl with the lid and shake vigorously until the chicken is evenly coated. Marinate in the refrigerator for 4 to 6 hours, shaking occasionally.
  • Take the marinating bowl out of the refrigerator and allow it to rest on the counter until the chicken reaches room temperature, approximately 1 hour.
  • Get your outdoor grill ready for a medium heat by lightly oiling the grate. Also, preheat the oven to 350 degrees F (175 degrees C). Next, create 2 stacks of 4 tortillas and wrap each stack in aluminum foil.
  • In a large skillet over medium heat, warm up the remaining 2 tablespoons of olive oil. Add the peppers and onion, then mix in the rest of the fajita seasoning. Cook while stirring occasionally until the vegetables are soft, which should take about 8 to 10 minutes.
  • As the vegetables are cooking, warm the tortillas in the oven. Simultaneously, grill the chicken, flipping halfway through, until fully cooked and the juices run clear, about 2 to 3 minutes per side.
  • Fill warm tortillas with flavorful chicken, peppers, and onions to create delicious fajitas.
