Indulgent chocolate chip cookie cake topped with creamy vanilla buttercream - a simple and irresistible crowd-pleaser!
Ingredients:
  • 0.75 cup brown sugar
  • 0.75 cup unsalted butter, at room temperature
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup shortening
  • 0.5 cup butter, softened
  • 4 cups confectioners' sugar, divided
  • 1 tablespoon water, or more as needed
Instructions:
  • In a bowl, cream together brown sugar, unsalted butter, and white sugar using an electric mixer until fluffy, for about 3 to 4 minutes. Add egg and 2 teaspoons of vanilla extract and mix until smooth. Gradually mix in flour, baking soda, and salt on low speed until just combined. Gently fold in chocolate chips until evenly distributed. The batter will be thick. Chill in the refrigerator for at least 30 minutes or overnight.
  • Preheat your oven to 350 degrees F (175 degrees C) and line a 9-inch cake pan with parchment paper.
  • Smooth the batter evenly into the cake pan.
  • Bake in the preheated oven for 20 minutes until the edges turn golden brown. Let the cake slightly cool in the pan before transferring to a wire rack to cool completely, around 30 minutes.
  • In a bowl, blend shortening and butter with an electric mixer until creamy. Gradually mix in 3 cups of confectioners' sugar until smooth. Stir in water and 1 teaspoon vanilla extract, followed by the rest of the confectioners' sugar until the buttercream is velvety. Add extra water for a thinner consistency, if desired.
  • Frost the cookie cake with buttercream either by spreading or piping.
