Homemade Elderberry Gummy Vitamins

Create homemade gummy vitamins using elderberries, hibiscus, rosehips, ginger, and honey for a natural and delicious twist.
Ingredients:
  • 2 cups dried elderberries
  • 2 cups distilled water
  • 0.5 cup dried rosehips
  • 0.5 cup dried hibiscus flowers
  • 1 tablespoon grated fresh ginger
  • 1 cinnamon stick
  • 6 whole cloves
  • 8 tablespoons grass-fed gelatin (such as Great Lakes®)
  • 1 cup raw, local honey
  • 12 ounces pureed strawberries
Instructions:
  • In a heavy saucepan, bring the elderberries, distilled water, rosehips, hibiscus flowers, ginger, cinnamon stick, and cloves to a boil. Simmer on low heat, stirring occasionally, for about 30 minutes.
  • Pass the mixture through a sieve into a bowl, pressing out all the juice from the berries. Discard the solids. Return the liquid to the saucepan over low heat. Sprinkle gelatin on top and whisk until fully dissolved. Remove from heat and allow to cool until warm but not hot. Mix in honey or pureed strawberries until fully dissolved.
  • Pour the mixture into fun-shaped silicone molds or a 9x13-inch baking pan greased with coconut oil.
  • Chill until firm, around 30 minutes. Unmold gummies or cut into pieces. Keep stored in a sealed container in the fridge.
