Create homemade farmer's cheese using a traditional Polish grandmother's recipe for a delightful snack that lasts a week.
Ingredients:
  • 1 gallon whole milk
  • 1 pinch salt
  • 1 large lemon, juiced
Instructions:
  • In a large pot, pour in the milk and stir in the salt. Heat over medium heat until boiling, stirring occasionally to prevent scorching.
  • Once the milk starts to boil (look for small bubbles forming at the edges), remove from heat and gently stir in lemon juice. Allow the milk to curdle for 5 to 10 minutes.
  • Prepare a sieve or colander lined with cheesecloth. Strain the milk to separate the curds. Wrap the cheesecloth around the curds, squeezing out excess liquid. The result is farmer's cheese. Store the cheese in plastic wrap or an airtight container, and decide whether to keep or discard the whey.
