Homemade Garlic Basil Mayonnaise

Indulge in Chef John's zesty garlic basil mayo for a burst of irresistible homemade flavor.
Ingredients:
  • 1 cup fresh basil leaves
  • 2 egg yolks
  • 3 cloves garlic, finely minced
  • 2 tablespoons fresh lemon juice
  • 0.75 teaspoon salt, or to taste
  • 1 pinch cayenne pepper, or to taste
  • freshly ground black pepper to taste
  • 1 teaspoon Dijon mustard
  • 1.5 cups vegetable oil
Instructions:
  • Bring a saucepan of water to a boil, and prepare a bowl of ice water within reach.
  • Blanch basil leaves in boiling water for 10 seconds until vibrant green and tender. Transfer leaves to ice water to quickly cool them down. Pat dry with a paper towel to remove excess water.
  • Combine egg yolks, garlic, lemon juice, salt, cayenne pepper, black pepper, basil leaves, and Dijon mustard in a container with a slightly larger base than a stick blender, like a measuring cup or large beer glass. Drizzle vegetable oil over the top.
  • Lift stick blender slightly as mayonnaise begins to form, then blend until thick, basil is finely chopped, and all oil is incorporated, about 10 to 20 seconds. Adjust seasonings to taste and transfer to a bowl. Refrigerate, and enjoy within 2 to 3 days.
