Indulge in homemade sugar and preservative-free breakfast sausage patties, let them chill overnight for optimal flavor.
Ingredients:
  • 1 tablespoon rubbed sage
  • 1 teaspoon kosher salt, or to taste
  • 0.5 teaspoon crushed red pepper flakes, or to taste
  • 0.5 teaspoon fennel seeds
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon dried thyme
  • 1 pound ground pork
  • 1 tablespoon vegetable oil
Instructions:
  • Combine sage, salt, parsley, red pepper, fennel, black pepper, smoked paprika, coriander, and thyme in a small bowl, mixing thoroughly.
  • Combine ground pork and seasoning mix in a bowl, then thoroughly mix by hand until evenly combined. Shape into a 2-inch diameter, 6-inch long roll. Wrap tightly in plastic wrap and refrigerate for 8 to 24 hours.
  • Prepare your outdoor grill by cleaning it and preheating it to medium-high heat, then lightly oil the grate.
  • Cut the seasoned pork into twelve 1/2-inch thick patties.
  • Place the patties on the hot grate and close the lid. Grill for 1 1/2 minutes, then rotate them 90 degrees and grill for another 1 1/2 minutes. Repeat this step until the total cooking time reaches 6 minutes and the juices run clear. Ensure the patties reach an internal temperature of at least 145 degrees F (63 degrees C) using an instant-read thermometer.
