Homemade Lady Fingers

Easy 4-ingredient ladyfingers recipe. Ideal for fruit salad or tiramisu.
Ingredients:
  • 4 eggs, separated
  • 0.66666698455811 cup white sugar, divided
  • 0.875 cup all-purpose flour
  • 0.5 teaspoon baking powder
Instructions:
  • Preheat the oven to 400°F (205°C) and line two 17x12-inch baking sheets with parchment paper. Attach a large pastry bag with a 1/2-inch round tip.
  • In a large bowl, beat egg whites with an electric mixer on high speed until soft peaks form. Gradually add 2 tablespoons of sugar and continue beating until stiff and glossy.
  • In a separate bowl, vigorously whisk egg yolks and the rest of the sugar until they become thick and very pale in color.
  • Gently incorporate half of the airy egg whites into the rich egg yolk mixture, sifting in the flour and baking powder. Follow by carefully folding in the rest of the egg whites until fully blended.
  • Pipe the mixture into the pastry bag and create 3-inch "fingers" on the baking sheets, spacing them about 1 inch apart.
  • Bake in a preheated oven until the top feels firm and is lightly golden, typically for 8 minutes.
