Crunchy energy bars for all-day alertness.
Ingredients:
  • 100.00 gm rolled oats
  • 85.00 gm desiccated coconut
  • 125.00 ml wheatgerm
  • 75.00 gm sesame seeds
  • 125.00 ml sunflower kernels
  • 125.00 ml pumpkin seeds (pepitas)
  • 170.00 gm sultanas
  • 125g butter
  • 178.75 gm honey
  • 59.40 gm brown sugar
Instructions:
  • Prepare a 3cm deep, 16cm x 28cm (base) baking pan by greasing and lining it with baking paper. Toast oats, coconut, wheatgerm, sesame seeds, sunflower kernels, and pumpkin seeds in a frying pan over medium heat for 8 to 10 minutes until golden. Transfer the mixture to a bowl and let it cool. Mix in the sultanas.
  • In a small saucepan, melt butter with honey and sugar over medium heat, stirring for 3 to 4 minutes until sugar dissolves. Bring to a boil, then simmer over low heat without stirring for 7 minutes until mixture reaches soft ball stage in ice-cold water. Combine with dry ingredients, stirring until mixed well.
  • Spread the mixture evenly into the pan using a large metal spoon, pressing down firmly. Let it cool, then cut into squares and store in an airtight container lined with foil for up to 7 days.
