Kid-friendly nut-free muesli bars, ideal for lunch boxes!
Ingredients:
  • 150.00 gm tahini, room temperature
  • 178.75 gm honey
  • 0.60 gm sea salt
  • 1.25 gm cinnamon
  • 62.50 gm boiling water
  • 3 Weet-Bix wheat biscuits, crushed
  • 32.50 gm shredded coconut
  • 50.00 gm rolled oats
  • 62.50 ml pepitas
  • 62.50 ml sunflower seeds
  • 40.00 ml flaxseed (linseed) meal
Instructions:
  • Preheat the oven to 180°C (350°F) and line the base and two sides of a 20 cm square cake tin with baking paper strip.
  • In a jug, whisk together tahini, honey, salt, cinnamon, and boiling water until smooth.
  • In a large bowl, mix the Weet-Bix wheat biscuits through to the flax meal. Add the tahini mixture and stir thoroughly to coat evenly.
  • Evenly spread the mixture into the prepared tin using a silicone spatula, pressing firmly for a smooth finish.
  • Bake for 20 minutes until golden brown. Allow to cool in the pan for 10 minutes, then transfer to a rack to cool completely. Cut into bars before serving.
