Whip up quick and tangy refrigerator pickles using fresh cucumbers, bell peppers, and onions. Perfect for sandwiches or snacking!
Ingredients:
  • 1 cup distilled white vinegar
  • 2 cups white sugar
  • 1 tablespoon salt
  • 6 cups sliced cucumbers
  • 1 cup sliced onions
  • 1 cup sliced green bell peppers
Instructions:
  • Assemble all the ingredients.
  • Check canning jars for cracks and rings for rust, discarding any defective ones. Place in simmering water and wash new lids and rings in warm soapy water.
  • In a medium saucepan over medium heat, combine vinegar, sugar, and salt. Bring to a gentle boil and cook for about 10 minutes until the sugar completely dissolves.
  • Combine cucumbers, onions, and bell peppers in a spacious glass bowl. Drizzle brine over the veggies and gently mix for a few minutes.
  • Place the vegetables and brine in sterilized jars, even if the brine doesn't completely cover them. Chill in the refrigerator for 1 to 4 days before enjoying.
