Create delicious homemade Italian pasta - tagliatelle, pappardelle, or tagliolini.
Ingredients:
  • 2.25 cups Italian-style tipo 00 flour
  • 1 pinch salt
Instructions:
  • On a marble or wooden work surface, generously sprinkle flour. Create a well in the center, crack in the eggs, and add salt. Lightly beat the eggs with a fork, gradually mixing in the flour until it becomes runny. Use a bench scraper to blend the remaining flour into the mixture until a cohesive ball of dough forms.
  • Work the dough by gently pressing, stretching, and folding it repeatedly until it is soft and smooth, around 10 minutes.
  • Form dough into a ball, place in a bowl, and cover tightly with plastic wrap. Chill in the refrigerator until firm, for 30 minutes to 1 hour.
  • Divide the dough into 3 equal portions. Flatten the first portion and feed it through the thickest setting of the pasta machine. Dust with flour, fold in half, and repeat 3 to 4 times until the dough is smooth, even, and no longer sticky.
  • Adjust the pasta machine to the middle setting and roll each sheet through once. Switch to the second-to-last setting and roll through once more. Cut the sheet in half. Repeat with the remaining 2 portions.
  • Attach the tagliatelle attachment to the pasta machine. Pass each piece through while rolling the machine handle with one hand and collecting the pasta with the other.
  • Lightly coat the pasta with a sprinkle more flour, then let it air dry for 30 minutes.
  • Boil tagliatelle in generously salted, boiling water until al dente, about 3 to 5 minutes.
