Homemade thick 'n' chunky salsa

Addictively spicy salsa for chip-dipping delight.
Ingredients:
  • 1 brown onion, finely chopped
  • 1 long red chilli, finely chopped
  • 1 small green capsicum, finely diced
  • 22.20 gm tomato paste
  • 500g tomatoes, diced
Instructions:
  • In a saucepan over medium heat, sauté onions in oil until soft, about 3 to 4 minutes. Add chili and capsicum, cook until tender, about 2 minutes. Then stir in tomato paste and tomatoes, and bring to a boil.
  • Lower the heat to medium-low and let it simmer uncovered for 15 minutes until thickened. Remove from heat and allow it to cool completely.
