Ingredients:
  • 500g (2 cups) Greek Style Yoghurt
  • 1 telegraph cucumber, peeled, halved, seeded
  • 1 large garlic clove, crushed
  • 20.00 ml finely chopped fresh chives
  • 36.40 gm olive oil
  • 31.50 gm fresh lemon juice
  • Salt, to taste
Instructions:
  • Strain yoghurt in muslin-lined sieve for 5-10 minutes to remove excess whey. Transfer strained yoghurt to a bowl, discarding the whey.
  • 1. Coarsely grate the cucumber and squeeze out excess moisture. Mix with yoghurt, garlic, chives, olive oil, lemon juice, and salt. Chill in the fridge overnight for the flavors to develop. Serve with warm flatbread, marinated feta, olives, and garnish with fresh herbs.
