Make homemade Greek tzatziki dip easily with this quick recipe.
Ingredients:
  • Sliced red onion, to serve
  • Dried oregano, extra, to serve
  • 1.25L (5 cups) water
  • 420g (2 cups) yellow split peas, rinsed, drained
  • 1 dried bay leaf
  • 80ml (1/3 cup) extra virgin olive oil
  • 50.00 ml red wine vinegar
  • 6-8 garlic cloves, finely chopped
  • 1 tsp dried oregano
  • Extra virgin olive oil, extra, to serve
Instructions:
  • In a saucepan, combine water, split peas, and bay leaf. Bring to a boil, skimming off any foam. Simmer on medium-low heat, covered, for 35 minutes or until split peas are tender.
  • Take out the bay leaf and dispose of it. Use a stick blender to puree the mixture until it forms a coarse puree. Allow it to cool slightly.
  • Combine the oil, vinegar, garlic, and oregano in the mixture. Slowly incorporate a bit of warm water, using a wooden spoon, until the mixture reaches a spoonable consistency. Season with salt and pepper to taste.
  • - Transfer the dish to a beautiful serving bowl. Sprinkle the top with fresh onion slices and a generous amount of extra oregano. Finish it off by drizzling some additional oil on top before serving.
