Make a delicious tomato puree from garden-fresh tomatoes for endless culinary possibilities.
Ingredients:
  • 4 pounds Roma tomatoes
  • 0.5 teaspoon salt
Instructions:
  • Prepare the tomatoes by washing, halving, and removing the cores. Roughly chop the tomatoes and add them to a large pot with salt.
  • In a pot, heat tomatoes over medium-high heat until boiling. Lower heat to medium and cook, stirring occasionally, until tomatoes are soft and reduced, about 20 minutes. Remove from heat and allow to cool, about 30 minutes.
  • Blend tomatoes until velvety smooth for about 30 seconds. Strain the mixture through a fine mesh strainer, pressing with a spoon to eliminate any skin and seeds.
  • Divide the mixture evenly between 2 pint-sized jars and refrigerate for up to 1 week. For a thicker puree, simmer to reach desired consistency before chilling and transferring to jars.
