Homemade tomato soup: Easy, customizable family favorite.
Ingredients:
  • 6 pounds tomatoes, halved, or more to taste
  • 8 cloves unpeeled garlic, or more to taste
  • 3 tablespoons olive oil
  • 3 tablespoons coarse salt, or to taste
  • 1 medium onion, diced
  • 2 teaspoons white sugar, or more to taste
  • 1 teaspoon dried oregano
  • 4 cups vegetable stock
  • 0.5 cup heavy cream
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Place the halved tomatoes cut-side up on a large 4-sided baking pan. Nestle the unpeeled garlic amongst the tomatoes. Drizzle generously with olive oil and sprinkle with coarse salt.
  • Roast in the preheated oven for 1 hour until perfectly cooked. Allow to cool in the pan before serving.
  • In a large stockpot, melt butter over medium-low heat. Sauté onion, sugar, and oregano until onion is soft, about 5-7 minutes. Peel roasted garlic, add to the pot with roasted tomatoes and juices. Pour in vegetable stock, cover, and simmer for 20 minutes.
  • Carefully blend the soup in batches using an electric blender. Be cautious with hot liquids, vent the lid slightly, and cover with a towel. Strain the puree through a mesh strainer into a clean pot, discarding any solids.
  • Incorporate heavy cream into the soup and season with salt and pepper to taste.
