Wholesome turkey soup with fresh veggies and pasta, perfect for enjoying Thanksgiving leftovers.
Ingredients:
  • 1.5 cups diced celery
  • 1.5 cups diced carrots
  • 1 cup diced onion
  • 1 bay leaf
  • 3 cups beef stock
  • 3 cups chicken stock
  • 2 cups roasted white turkey meat
  • 0.75 cup rotini pasta
Instructions:
  • In a large pot, warm oil over medium heat and saute celery, carrots, onion, parsley, and bay leaf until veggies are tender, around 10 minutes. Add beef stock, chicken stock, turkey, salt, and pepper. Bring to a boil, then lower the heat, cover with a lid, and let it simmer until the soup is heated through, approximately 15 minutes.
  • Add the rotini to the soup and cook for about 15 minutes until the pasta is al dente.
