Honey and cardamom tamarillos

Ingredients:
  • 250ml honey
  • 1/4 tsp ground cardamom
  • 6 red tamarillos, halved
  • Natural yoghurt, to serve
Instructions:
  • In a saucepan, gently mix together the honey, cardamom, and 2 cups (500ml) of water over low heat until dissolved. Increase the heat to high and bring to a vigorous boil. Allow to boil, uncovered, for 10 minutes.
  • Lower the heat and gently place the tamarillos, cut side up, in the pan. Cover them with a round of non-stick baking paper and simmer for 10 minutes until they are soft.
  • Arrange the tamarillos on serving plates. Let the syrup cool for 30 minutes in a jug. Drizzle approximately 2 tablespoons of syrup on each plate. Enjoy with a side of yogurt.
