Ingredients:
  • 2 limes
  • 20g (1 tbsp) unsalted butter
  • 4 bananas, cut diagonally into 1cm-thick slices
  • 40mls (2 tbsp) honey
  • 50g (1/2 cup) flaked almonds, toasted, to serve
  • 125mls (1/2 cup) thin cream
  • 1/2 tsp cardamom powder
Instructions:
  • Whisk together the cream and cardamom until soft peaks form for the cardamom cream.
  • Use a vegetable peeler to remove 3 thick strips of rind from 1 lime. Take off any white pith from the rind and slice into thin strips. Set aside for garnishing.
  • Juice the limes. In a frying pan over medium heat, melt butter and cook banana, tossing often, for 4 minutes.
  • Drizzle in the lime juice and honey, tossing gently to coat. Serve the warm dish with a dollop of cardamom cream, almonds, and lime rind strips.
