Elevate your Christmas table with a sweet and spicy glazed ham tradition.
Ingredients:
  • 7kg leg of ham, on the bone
  • Cloves
  • 85g (1/3 cup) Dijon mustard
  • 125ml (1/2 cup) honey
  • 45g (1/4 cup, lightly packed) brown sugar
  • 250ml (1 cup) apple juice
  • 250ml (1 cup) dry sherry
  • Mango & coriander chutney (see related recipe), to serve
Instructions:
  • Preheat oven to 160°C. Place oven shelf on the lowest position. Cut a zigzag pattern around the shank of the ham. Remove rind in one piece. Score fat in a diamond pattern, 1cm deep. Stud diamonds with cloves.
  • Coat the ham with mustard using a pastry brush. Bake in the oven for about 20 minutes, or until the ham begins to brown.
  • In a small saucepan over medium heat, melt together the honey, sugar, apple juice, and sherry. Stir constantly for 2-3 minutes until the mixture is smooth. Carefully drizzle the glaze over the ham.
  • Roast in the oven, occasionally brushing with the flavorful pan juices, for 1 hour or until beautifully golden. Present the ham on a platter and accompany with the mango chutney. (Refer to tip 5 for carving instructions).
