Brown sugar and honey mustard ham

Dazzle guests with our irresistible brown sugar honey mustard glazed ham.
Ingredients:
  • 178.75 gm honey
  • 82.50 ml brandy
  • 23.40 gm dijon mustard
  • 1 sprig fresh thyme
  • 8kg cooked leg ham
  • 180.00 gm brown sugar
Instructions:
  • Preheat your oven to 180C (356F) or 160C (320F) for a fan-forced oven.
  • Combine honey, brandy, mustard, and a thyme sprig in a small saucepan over low heat. Stir for 2 minutes until the honey melts. Increase the heat to medium-high and bring to a boil. Reduce heat to low and simmer uncovered for 5 minutes until slightly thickened and syrupy. Remove from heat and let it cool for 15 minutes before discarding the thyme sprig.
  • With a small sharp knife, cut the ham rind about 8cm from the shank. Carefully peel back and remove the rind starting from the opposite end of the shank. Wrap the shank end in foil.
  • Place the ham on a greased wire rack in a roasting pan. Brush with half the honey mixture. Bake, basting with the rest of the honey mixture halfway through, until golden, about 1 hour. Sprinkle with sugar and bake for another 30 minutes until caramelized. Remove foil from the shank, and serve.
