Start your day off right with this delicious homemade nutty cereal.
Ingredients:
  • 125g hazelnuts
  • 270g (3 cups) rolled oats
  • 250g shredded coconut
  • 375ml (1 1/2 cups) honey
  • 200g dried apricots, diced
  • 170g dried cranberries
  • 140g (1 cup) pistachio kernels, coarsely chopped
Instructions:
  • 1. Preheat the oven to 200C. 2. Spread hazelnuts on a baking tray and toast in the oven for about 5 minutes until fragrant. 3. Transfer the toasted hazelnuts into a clean tea towel, rub to remove the skins, and coarsely chop them.
  • In a large roasting pan, mix rolled oats, coconut, and half of the honey. Bake in the oven for 15 minutes, stirring every 5 minutes until slightly browned. Take out of the oven and stir in the remaining honey. Bake for another 15-20 minutes, stirring every 10 minutes until golden brown. Remove from the oven, add apricots, craisins, and pistachios, stir well, and let it cool for 1 hour.
  • Break the honey & nut cluster muesli into small pieces using your hands. Store the broken pieces in a screw-top jar or airtight container.
