Peach, honey and pine nut tarts

Make a stunning peach tart with ease.
Ingredients:
  • 50g unsalted butter, softened
  • 20g caster sugar
  • 2.20 gm vanilla extract
  • 1 egg
  • 50g ground almonds
  • 1 tsp plain flour
  • 75g honey
  • 4 (firm but ripe) peaches
  • 375g packet All Butter Puff Pastry (see note)
  • 30g pine nuts, toasted
  • 1 vanilla bean, seeds scraped
  • Double cream, to serve
Instructions:
  • Combine butter, sugar, vanilla, egg, almonds, flour, a pinch of salt, and 25g honey in an electric mixer and beat until fully combined. Refrigerate for 30 minutes to firm up.
  • Preheat your oven to 250C. Slice peaches in half, remove the pit, and cut each half into 4 wedges.
  • Preheat your oven to 240°C (475°F) and line a sturdy baking tray with parchment paper. Divide the pastry in half and lay both pieces on the tray. Score a 1.5cm border around each piece using a knife. Spread half of the almond mixture on each piece. Arrange peach slices widthwise on top of each piece in 4 rows of 4. Lower the oven temperature to 220°C (425°F) and bake the tarts for 15 minutes. Lower the temperature once more to 170°C (340°F) and bake for an additional 10-15 minutes, or until the pastry is puffed up and golden brown.
  • Sprinkle tarts with pine nuts. Then, in a small pan, cook the remaining honey and vanilla bean seeds until it becomes a syrup, and brush over the tarts. Serve warm with cream.
