Ingredients:
  • Melted butter, to grease
  • 9 small lady william apples
  • 60g butter, chopped
  • 50g (1/4 cup) raw caster sugar
  • 60ml (1/4 cup) honey
  • 20.00 ml fresh thyme leaves
  • 250ml (1 cup) milk
  • 250ml (1 cup) thin cream
  • 1 vanilla bean, split lengthways
  • 5 egg yolks
  • 60g (1/4 cup) caster sugar
Instructions:
  • Preheat your oven to 180°C and generously brush the baking dish with melted butter.
  • Rinse the apples thoroughly and pat dry with a paper towel before arranging them in the greased baking dish.
  • In a medium saucepan over low heat, gently melt the butter with the sugar and honey. Stir continuously for 3 minutes until the mixture is smooth and the butter has melted completely.
  • Pour the luscious butter mixture over the apples, then generously scatter with fragrant thyme leaves. Bake in a preheated oven, periodically spooning over the delicious pan juices, for 45-50 minutes until the apples are tender.
  • To prepare the custard, combine milk, cream, and vanilla bean in a saucepan. Heat gently until almost boiling, stirring occasionally. Remove from heat. Whisk egg yolks and sugar until thick. Remove vanilla bean, scrape in seeds, and mix into egg mixture. Cook over low heat, stirring constantly, until custard coats the spoon.
  • To serve, halve 3 apples and arrange 1 whole and 1 half apple in each bowl. Top with custard and drizzle with pan syrup for a decorative touch. Serve promptly.
