Honey Bun Cake from Scratch

Sweet cinnamon honey bun cake: Vanilla batter swirled with brown sugar & cinnamon.
Ingredients:
  • 0.75 cup butter, softened, divided
  • 2 cups white sugar, divided
  • 3 eggs
  • 1 tablespoon clear imitation vanilla extract
  • 2.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.25 cups sour cream
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
Instructions:
  • Preheat your oven to 325°F (165°C).
  • Butter the fluted tube pan generously with 2 tablespoons of butter, then sprinkle in 1/4 cup of sugar. Swirl the pan gently to ensure the sugar evenly coats the sides.
  • In a large bowl, cream together 2/3 cup of butter and 1 3/4 cups of sugar until light and fluffy using an electric mixer. Add eggs one at a time, beating well after each addition, and then mix in the vanilla extract.
  • In a bowl, combine flour, baking powder, and salt. Gradually mix this with the butter mixture along with the sour cream, starting and finishing with the flour mixture. Beat the batter thoroughly after each addition.
  • Combine the rich brown sugar with fragrant cinnamon in a small bowl.
  • In the prepared pan, alternate layers by pouring 1/3 of the batter, sprinkling 1/2 of the brown sugar-cinnamon mixture, then repeating. Finish with the final layer of batter on top and swirl it using a butter knife.
  • Bake in the oven until a toothpick comes out clean, around 1 hour. Let it cool in the pan for 5 minutes, then flip onto a wire rack to cool completely.
