Spiced zucchini bread with self-rising flour, loaded with nuts and coconut for a delightful texture.
Ingredients:
  • 3 cups self-rising flour
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1.6666666269302 cups white sugar
  • 0.5 cup vegetable oil
  • 0.5 cup melted butter
  • 0.5 cup honey
  • 2 tablespoons vanilla extract
  • 3 cups grated unpeeled zucchini
  • 1 cup chopped walnuts
  • 0.5 cup flaked coconut
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease two 9x5-inch loaf pans.
  • Combine flour, cinnamon, nutmeg, and salt in a bowl and mix until well incorporated.
  • In a large bowl, combine sugar, oil, melted butter, honey, eggs, and vanilla, whisking until smooth. Stir in zucchini, walnuts, and coconut. Mix in the flour mixture until fully incorporated. Divide the batter evenly between the loaf pans.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted in the center comes out clean. Allow the loaves to cool completely and for the best flavor, store them overnight in plastic bags, if desired.
