Indulge in this irresistible honey delight for a sweet and satisfying treat!
Ingredients:
  • 375.00 ml macadamia nuts
  • 20.00 gm cornflour
  • 135.00 gm firmly packed brown sugar
  • 75g butter, melted
  • 41.20 gm milk
  • 178.75 gm honey
  • 3 eggs, lightly beaten
  • Icing sugar mixture, to serve
  • Whipped cream, to serve
  • 375.00 ml plain flour
  • 75.00 gm icing sugar mixture
  • 125g macadamia spread
Instructions:
  • Create pastry by blending together flour, sugar, and butter until mixture resembles breadcrumbs. Incorporate egg yolk and process until dough forms. Shape into a disc, wrap in plastic, and chill for 40 minutes until firm.
  • Preheat your oven to 180°C (160°C fan-forced) and generously grease a 3cm-deep, 23.5cm round loose-based flan tin. Roll out the pastry between 2 sheets of baking paper until it's 3mm thick. Carefully line the prepared tin with the pastry. Place baking paper and ceramic pie weights or uncooked rice on top of the pastry. Bake for 10 minutes, then remove the weights and continue baking for another 10 minutes until the pastry is golden. Allow it to cool completely before using.
  • Preheat your oven to 160°C/140°C fan-forced. Set aside 1/2 cup of macadamias. Roughly chop the rest of the macadamias. In a bowl, combine the chopped macadamias, cornflour, brown sugar, butter, milk, honey, and eggs. Pour the mixture into the pastry case and sprinkle the reserved macadamias on top.
  • Bake the pie for 50 to 55 minutes, until the center is just set. If it starts to brown too much, loosely cover with foil. Allow the pie to cool, then refrigerate for 4 hours until cold. Dust with icing sugar before serving. Enjoy with whipped cream or honey ice cream.
