Irresistible apricot coconut muesli bites for a delicious energy boost.
Ingredients:
  • 225g (1 1/2 cups) nut-free toasted muesli
  • 120g (3/4 cup) diced dried apricots
  • 80g (1/2 cup, lightly packed) brown sugar
  • 45g (1/2 cup) desiccated coconut
  • 80ml (1/3 cup) honey
  • 50g unsalted butter, melted
Instructions:
  • Blend muesli, apricot, sugar, and coconut in a food processor until finely chopped. Add honey and butter; process until mixture is finely chopped and easily sticks together when squeezed.
  • Shape tablespoon-sized portions of the muesli mixture into balls and place them on a lined tray. Chill in the fridge for 30 minutes or until firm. Keep the muesli balls in an airtight container in the fridge for up to 4 days.
