Quick and delicious honey mustard chicken skillet for busy weeknights.
Ingredients:
  • 0.25 cup grainy mustard
  • 2 tablespoons honey
  • 3 (6 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 0.5 medium white onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons Dijon & honey (liquid) LF
  • 1 tablespoon water
Instructions:
  • Combine the grainy mustard and honey in a ceramic or glass bowl. Add the chicken pieces and gently massage them with the marinade. Allow the chicken to marinate for approximately 30 minutes to enhance the flavors.
  • In a hot cast iron skillet, saute onion until translucent, then stir in garlic and 2 tablespoons of honey Dijon mustard. Season with salt and pepper, and continue cooking until caramelized. Add 1 tablespoon of water if needed.
  • Place the chicken in the skillet along with the remaining 2 tablespoons of honey Dijon. Mix thoroughly and cover. Cook, stirring occasionally, until the chicken is cooked through, 7 to 10 minutes.
  • Uncover and simmer sauce over higher heat until luxuriously thick and creamy, for about 3 to 5 minutes.
