Try these quick and delicious honey mustard chicken thighs for a simple and satisfying main dish tonight!
Ingredients:
  • 2-3 pounds skin-on, bone-in chicken thighs (or legs), trimmed of excess fat and excess skin
  • Salt
  • 1/4 to 1/3 cup smooth Dijon mustard
  • 1/4 to 1/3 cup honey
  • 1 tablespoon extra virgin olive oil
  • 2 sprigs rosemary (or a generous sprinkling of dried rosemary)
  • Freshly ground black pepper
Instructions:
  • Preheat the oven to 350°F, placing a rack in the center for even cooking.
  • Season the chicken: Coat both sides of the chicken thighs generously with salt and arrange them skin-side up in a shallow casserole dish.
  • Prepare the honey mustard sauce by whisking together mustard, honey, and olive oil in a bowl. Season with a pinch of salt and adjust the salt and mustard levels to taste until you reach your desired flavor profile.
  • Drizzle the honey mustard sauce over the chicken, nestling rosemary sprigs between the pieces.
  • Place the chicken in the oven and bake at 375°F for 45 minutes, or until the thighs reach 175°F. Remove any excess chicken fat from the pan. Sprinkle freshly ground black pepper over the chicken before serving.
