Ingredients:
  • 150.00 gm self-raising flour, sifted
  • 100.00 gm rolled oats
  • 107.50 gm caster sugar
  • 85.00 gm desiccated coconut
  • 250.00 ml roasted hazelnuts, roughly chopped
  • 125g butter, melted, cooled
  • 89.38 gm honey
  • 1 egg, beaten
  • 300.00 gm pure icing sugar, sifted
  • 5.00 gm butter, softened
  • 1 lemon, rind finely grated, juiced
Instructions:
  • Preheat your oven to 180°C and prepare a 3cm deep, 20cm x 30cm lamington pan by greasing and lining it.
  • In a large bowl, mix together flour, oats, sugar, coconut, and 1/2 cup of hazelnuts. In a separate container, whisk melted butter, honey, egg, and vanilla. Pour the wet mixture into the dry ingredients and stir until fully combined.
  • Press the mixture firmly into the bottom of the pan. Bake until golden brown, for about 25 to 30 minutes. Allow it to cool for 20 minutes before serving.
  • Prepare the icing by mixing icing sugar, butter, lemon zest, and 1/4 cup of lemon juice in a bowl. Stir until silky, adding warm water if needed to reach desired consistency. Coat the slice with the icing, then top with the remaining 1/2 cup of hazelnuts. Let it firm up before slicing into squares and serving.
