Honey Oatmeal Bread II

Tender oatmeal bread with a sweet topping of rolled oats.
Ingredients:
  • 2 cups boiling water
  • 1 cup rolled oats
  • 0.5 cup honey
  • 2 teaspoons salt
  • 1 (.25 ounce) package active dry yeast
  • 0.5 cup warm water (110 degrees F/45 degrees C)
  • 4 cups bread flour
  • 2 tablespoons honey, warmed slightly
  • 2 tablespoons rolled oats
Instructions:
  • Combine oats, boiling water, 1/2 cup honey, butter, and salt in a large mixing bowl. Allow to stand for 1 hour.
  • Whisk the yeast in warm water in a small bowl until creamy. Allow it to stand for about 10 minutes until creamy.
  • Combine the yeast mixture with the oat mixture, then incorporate 2 cups of flour and mix thoroughly. Gradually add the remaining flour, 1/2 cup at a time, beating well after each addition. Once the dough is formed, knead it on a lightly floured surface for about 20 minutes until smooth and elastic. Place the dough in a large oiled bowl, cover with a damp cloth, and let it rise in a warm place until doubled in volume, approximately 1 hour.
  • After deflating the dough, gently shape it into two loaves on a floured surface. Transfer the loaves to two greased 9x5 inch loaf pans. Cover with a damp cloth and let rise until doubled, approximately 40 minutes.
  • Preheat your oven to 350°F (175°C).
  • Once the oven is preheated, bake for roughly 30 minutes until the top turns golden brown and the bottom of the loaf gives a hollow sound when gently tapped. Take the loaves out of the pans, then brush the tops with 2 tablespoons of honey and sprinkle oats over them.
