Honey Orange Marmalade

Refreshing citrus marmalade with honey, ideal for spreading on toast and biscuits.
Ingredients:
  • 4 oranges - peeled, seeds removed, and white pith removed
  • 1 grapefruit - peeled, seeds removed, and white pith removed
  • 1.25 cups white sugar, divided
  • 3 tablespoons low-sugar pectin
  • 1 cup orange juice
  • 1 cup water
  • 0.75 cup honey
Instructions:
  • Combine oranges and grapefruit in a food processor; pulse 8 times to blend.
  • In a pot, combine fruit with 1/4 cup white sugar and pectin. Pour in orange juice and water. Bring the mixture to a boil, then simmer for 8 minutes. Add honey and the remaining 1 cup of sugar to the marmalade. Bring to a vigorous boil for 1 minute.
  • Boil jars and lids for a minimum of 5 minutes to sterilize. Fill hot, sterilized jars with marmalade, leaving a 1/4 inch space at the top. Remove air bubbles by running a knife or spatula along the inside of the jars. Clean the jar rims with a damp paper towel to remove any residue. Seal with lids and rings.
  • 1. Prepare a large stockpot by setting a rack inside and filling it halfway with water. 2. Bring the water to a boil and carefully lower the jars into the pot using a jar lifter, ensuring a 2-inch gap between each jar. 3. Add additional boiling water if needed to ensure at least a 1-inch of water above the jar tops. 4. Cover the pot, bring the water to a rolling boil, and process for 15 minutes.
  • Remove the jars from the stockpot and place on a cloth-covered or wooden surface to cool, ensuring a tight seal by pressing the lids with a finger. Store in a cool, dark area.
