Make-ahead peach pie filling with peach schnapps for extra flavor. Refrigerated crust makes a beautiful lattice top.
Ingredients:
  • 6 fresh peaches - peeled, pitted and sliced into thin wedges
  • 0.25 cup honey
  • 2 fluid ounces peach schnapps, or more to taste
  • 2 tablespoons all-purpose flour
  • 2 prepared pie crusts
Instructions:
  • In a saucepan over medium heat, combine peaches, honey, and peach schnapps. Cook until peaches are soft and mixture thickens, stirring occasionally for about 8 minutes. Add sugar and cinnamon, mixing well. Stir in flour and bring to a simmer until filling thickens, about 10-15 minutes. Remove from heat, transfer to a container, and refrigerate for 4 hours or overnight.
  • Preheat your oven to a sizzling 425°F (220°C).
  • Place the bottom pie crust into a 9 1/2-inch pie pan and spread the peach filling evenly. Cut the second crust into 1-inch wide strips, then form a lattice crust by weaving the strips over and under each other. Secure the ends by pinching them to the bottom crust.
  • Place the pie in the preheated oven for approximately 15 minutes. Remove and shield the crust edges with foil strips. Bake until the top crust turns a beautiful golden brown, around 30 more minutes. Allow the pie to cool on a wire rack for at least 2 hours before serving to ensure the pie filling sets perfectly.
