Peach-Honey-Vanilla Butter

Simmered peach puree with citrus, honey, and vanilla canned into delicious fruit butter.
Ingredients:
  • 18 fresh peaches, pitted
  • 1 apple - peeled, cored, and diced
  • 0.25 cup orange juice
  • 8 to 10 pint-sized jars
  • 2 cups white sugar
  • 0.75 cup honey
  • 2 vanilla beans, split, seeds scraped
Instructions:
  • In a large, heavy pot, mix peaches, apple, and orange juice. Bring to a boil, then simmer covered until peaches are tender, for 10 to 15 minutes. Remove from heat and allow to cool slightly for about 10 minutes.
  • Inspect 8 to 10 pint-sized jars for cracks and rings for rust, discarding any defective ones. Submerge in simmering water until peach mixture is ready. Clean new lids and rings in warm soapy water.
  • Blend peach mixture in a blender or food processor in batches until smooth. Aim for approximately 14 cups of puree.
  • Transfer the entire puree back into the pot. Incorporate the sugar, honey, and vanilla bean seeds. Let it come to a boil, stirring until the sugar dissolves; then lower the heat to a simmer. Cook uncovered until the mixture thickens and begins to mound, stirring frequently, for 60 to 70 minutes.
  • Pour the mixture into hot, sterilized jars, leaving a 1/4 inch space at the top. Gently remove air bubbles by running a knife or spatula along the insides. Clean the rims with a moist paper towel, then seal with lids and tighten rings securely.
  • Fill a large stockpot halfway with water and bring to a boil. Using a jar holder, carefully lower jars into the boiling water, ensuring they're 2 inches apart. Add more boiling water to cover the jars by at least 1 inch. Cover the pot, bring to a rolling boil, and process for 5 minutes.
  • After lifting the jars out of the stockpot, allow them to cool for 12 to 24 hours, making sure they are spaced apart. Press the center of each lid gently to check for a secure seal. For storage, take off the rings and store the jars in a cool, dark place.
