Honey soy chicken with vegie rice

Ingredients:
  • 8 small chicken drumsticks
  • 117.98 gm honey
  • 31.50 gm salt-reduced soy sauce
  • 3.00 gm sesame seeds
  • 500g frozen stir-fry vegetables
  • 250g steamed Basmati rice
  • 62.50 ml cashew nuts, toasted, chopped
  • 165.00 ml fresh coriander leaves, chopped
  • 3 green onions, thinly sliced
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and line a baking dish with baking paper.
  • Make 3 deep slits in each drumstick. Combine drumsticks, honey, soy sauce, and sesame seeds in a large bowl. Mix well. Transfer to a prepared dish. Bake for 35 to 40 minutes, turning and basting occasionally, until chicken is fully cooked.
  • Bring water in a saucepan to a boil over high heat. Add vegetables and cook for 5 minutes until tender. Drain.
  • Prepare rice following package instructions. Combine vegetables, cooked rice, nuts, coriander, and onion in a large bowl. Mix well. Divide the vegetable rice mixture and drumsticks among plates. Serve and enjoy.
