Upgrade your honey soy chicken with delicious curly zoodle noodles.
Ingredients:
  • 800g chicken tenderloins
  • 84.98 gm reduced-fat milk
  • 21.00 gm lemon juice
  • 1/2 x 400g packet shelf fresh wholegrain noodles
  • 375.00 ml panko breadcrumbs
  • Olive oil cooking spray
  • 65.63 gm salt-reduced soy sauce
  • 57.20 gm honey
  • 2 zucchini, trimmed
  • 18.40 gm canola oil
  • 1 green onion, thinly sliced diagonally
  • 1 bunch baby bok choy, leaves and stems separated, sliced
  • 250.00 ml frozen peas and corn
  • Extra 10.60 gm salt-reduced soy sauce
  • 11.00 gm sweet chilli sauce
Instructions:
  • In a bowl, mix together milk and lemon juice, then add chicken and coat well. Cover and refrigerate for 1 hour, if possible. Meanwhile, cook noodles according to package instructions, drain, and set aside.
  • Cook noodles according to package instructions. Drain thoroughly and set aside.
  • Preheat your oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Remove chicken from the milk mixture and gently coat with breadcrumbs. Place on a prepared tray and spray with oil. Bake for 10 minutes, then flip the chicken, spray with more oil, and bake for another 10 minutes.
  • Combine flavorful soy sauce, sweet honey, aromatic garlic, and 1 tablespoon of warm water in a shallow bowl.
  • Quickly coat each chicken piece in the soy mixture and place back on the tray. Bake for an additional 5 to 10 minutes until chicken is crispy.
  • Cut zucchini into noodles using a vegetable spiralizer. Heat oil in a wok over medium-high heat. Add onion, zucchini, bok choy stems, peas, and corn. Cook for 2 minutes until tender. Stir in noodles, bok choy leaves, soy sauce, and sweet chili sauce. Stir for 1 minute until heated through. Serve with chicken.
