Honey Spice Roast Turkey with Apple Pecan Stuffing

Wow your guests with a flavorful roast turkey dish, infused with aromatic spices and a touch of sweetness for a special holiday feast.
Ingredients:
  • 12- to 15-lb turkey, thawed if frozen
  • 1/4 cup honey
  • 2 tablespoons butter or margarine, melted
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cumin
  • 1/4 cup butter or margarine
  • 1/2 cup pecan pieces
  • 1 medium apple, chopped (1 cup)
  • 4 cups herb-seasoned stuffing mix (from 14- to 16-oz package)
  • 2 cups apple juice
Instructions:
  • Preheat the oven to 325°F. Carefully loosen the skin from the turkey breast, starting at the back opening, with your fingers. In a small bowl, combine honey, 2 tablespoons of melted butter, chili powder, allspice, and cumin. Brush half of the mixture under the turkey breast skin (save the rest for later).
  • In a 4-quart Dutch oven over medium-high heat, melt 1/4 cup of butter until it glistens. Toast pecans in the butter for 1 to 2 minutes, stirring occasionally until they are lightly golden. Gently incorporate apple, stuffing mix, and apple juice until everything is moistened.
  • Prepare the turkey for baking: Start by filling the wishbone area with stuffing, then fasten the neck skin to the back with a skewer. Next, fold the wings across the back with the tips touching and lightly fill the body cavity with the remaining stuffing (avoid packing it too tightly). Tuck the drumsticks under the skin at the tail or tie them together with string, then tie them to the tail. Finally, place the turkey breast side up on a rack in a shallow roasting pan. Insert a meat thermometer into the thigh muscle without touching the bone and refrain from adding water.
  • Cover the dish with foil and bake for 3 to 4 hours. Uncover and brush with the remaining honey mixture for the last 30 minutes of baking. Cook until the thermometer reads 180°F and the juice is no longer pink when the center of the thigh is cut. The drumsticks should be easy to move when lifted or twisted.
  • Transfer the turkey to a cozy platter and gently cover it with foil to maintain its warmth. Allow it to rest for a minimum of 15 minutes for effortless slicing. Store any extra turkey and stuffing in the refrigerator, making sure to cover them separately.
