Try Chef John's honey-brined fried chicken for crispy, juicy perfection.
Ingredients:
  • 3 cups cold water
  • 0.25 cup kosher salt
  • 0.25 cup honey
  • 4 boneless skinless chicken breast halves
  • 0.25 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon black pepper
  • 0.5 teaspoon garlic salt
  • 0.5 teaspoon onion salt
  • 1 pinch cayenne pepper, or to taste
  • 2 cups vegetable oil for frying, or as needed
Instructions:
  • In a large bowl, mix cold water, kosher salt, and honey until the salt dissolves. Add chicken breasts to the bowl and use a plate to keep them submerged. Cover the bowl with plastic wrap and refrigerate for 1 hour.
  • Take the bowl out of the fridge, pat the chicken dry, and place it in a new large bowl. Pour buttermilk over the chicken and allow it to sit at room temperature for 15 minutes.
  • In a large bowl, mix together flour, pepper, garlic salt, onion salt, and cayenne pepper for a flavor-packed blend.
  • Dredge each chicken breast generously in the flour mixture ensuring all sides are well coated. Transfer the flour-coated chicken breasts to a cooling rack and allow them to air dry for 15 minutes.
  • Heat vegetable oil in a large skillet until it reaches 350 degrees F (175 degrees C).
  • In batches, sear chicken breasts until golden and cooked through, about 5 to 8 minutes per side. Use an instant-read thermometer to ensure chicken reaches internal temperature of at least 165 degrees F (74 degrees C).
  • Place the chicken on a cooling rack and let it cool for 5 minutes before serving.
