Honey-Dijon Turkey Tenderloins with Fresh Asparagus

Ingredients:
  • 1 package (20 oz) boneless turkey breast tenderloins, sliced 1/2 inch thick
  • 1 teaspoon dried thyme leaves
  • 3/4 teaspoon garlic-pepper seasoning
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 2 tablespoon coarse-grain Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 1 lb fresh asparagus, cut into 2-inch pieces (3 cups)
  • 1 1/2 cups grape tomatoes, halved
Instructions:
  • Season the turkey with thyme and garlic-pepper seasoning. Heat 1 tablespoon of oil in a 12-inch skillet over medium-high heat. Cook the turkey for 5 to 7 minutes until lightly browned and the juices run clear when cut at the thickest part (165°F). Remove from skillet and set aside.
  • Combine the broth, mustard, honey, and cornstarch in a small bowl and set aside.
  • Heat the remaining 1 tablespoon of oil in the same skillet over medium-high heat. Saute the asparagus for 3 minutes, stirring frequently. Then, add the cooked turkey and broth mixture, stirring for 1 minute until the sauce thickens. Finally, add the tomatoes and cook for an additional minute, stirring constantly.
