Sweet and spicy recipe for those with a sweet tooth and a love for heat! Can swap shrimp for chicken.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 0.5 onion, chopped
  • 1.5 teaspoons ground ginger
  • 2 teaspoons red pepper flakes
  • 1 red bell pepper, chopped
  • 0.5 zucchini, halved lengthwise and sliced
  • 3 cups fresh mushrooms, coarsely chopped
  • 2 tablespoons cornstarch
  • 0.5 cup honey
  • 1 pound medium shrimp - peeled and deveined
  • salt and pepper to taste
Instructions:
  • In a hot wok or large skillet, add olive oil until it shimmers. Add garlic, onion, ginger, and red pepper flakes, cook until onion softens and starts browning. Add bell pepper, zucchini, and mushrooms, cook until zucchini softens, around 4 minutes.
  • Blend cornstarch smoothly into honey, then mix into vegetables and simmer until thickened for about 2 minutes. Introduce shrimp and cook until pink for around 3 minutes. Season with salt and pepper to taste before serving.
