Elevate your Easter feast with a creative twist on traditional dishes!
Ingredients:
  • 36.40 gm olive oil
  • 117.98 gm honey
  • 125.00 ml chopped fresh mint leaves
  • 40.00 ml white wine vinegar
  • 4 x 8-cutlet (500g each) lamb racks
Instructions:
  • In a glass or ceramic baking dish, mix together oil, honey, mint, and vinegar. Add the lamb and coat it well. Cover and refrigerate for 20 minutes or overnight for best results.
  • Take out the lamb from the dish, keeping the marinade. Preheat the barbecue on high with the hood closed. Place the lamb on a wire rack in a large disposable baking tray. Turn down the heat to medium. Grill the lamb with the hood down using indirect heat for 25 minutes for medium doneness or until it reaches your preferred level of doneness (refer to note). Take it off the barbecue, cover it with foil, and let it rest for 5 minutes.
  • In a saucepan over medium heat, heat the reserved marinade until boiling. Let it simmer for 3 to 4 minutes or until reduced by half. Cut each lamb rack in half and serve with the sauce.
