Honey-Mint Carrots

Honey-mint glazed carrots.
Ingredients:
  • 6 medium carrots, cut into 1/4-inch diagonal slices (3 cups)
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh or 1 teaspoon dried mint leaves
Instructions:
  • In a 2-quart saucepan, bring 1 inch of water to a rolling boil. Add the carrots and bring the water back to a boil. Then, lower the heat to low.
  • Simmer the veggies for about 10 minutes until they're just tender, then drain. Mix in some honey and fresh mint for a sweet and refreshing finish.
