Flavorful veggie-packed dinner with convenient marinade, a new favorite.
Ingredients:
  • 1 lb uncooked turkey breast slices, about 1/4 inch thick
  • 1/2 cup Dijon and honey poultry and meat marinade
  • 1 cup ready-to-eat baby-cut carrots, cut lengthwise in half
  • 2 cups frozen sugar snap peas
Instructions:
  • Place the turkey in a shallow glass or plastic dish and generously pour the marinade over the turkey. Make sure to turn the slices to ensure they are evenly coated. Cover the dish and let it stand at room temperature for 10 minutes.
  • Prepare a 10-inch skillet with cooking spray and heat over medium heat. Drain the majority of the marinade from the turkey, then cook in the skillet for approximately 5 minutes, flipping once, until nicely browned.
  • Gently nestle carrots under the turkey in the skillet, then layer snap peas on top. Cover and let simmer for about 7 minutes until the carrots are tender and the turkey is cooked through.
