Orange honey oatmeal muffins with a hint of tangy yogurt, nutritious flaxseed meal, and crunchy walnuts.
Ingredients:
  • 0.5 cup old-fashioned oats
  • 0.5 cup flaxseed meal
  • 0.25 cup white sugar
  • 2 teaspoons baking powder
  • 1 cup plain yogurt
  • 0.5 cup orange juice
  • 0.33333334326744 cup honey
  • 2 eggs, slightly beaten
  • 2 teaspoons grated orange zest
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts
  • 0.5 cup granola
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • In a large bowl, mix together flour, oats, flaxseed meal, sugar, baking powder, and salt.
  • In a small bowl, mix together yogurt, orange juice, honey, eggs, orange zest, and vanilla extract until well combined.
  • Create a crater in the middle of the dry ingredients and gently pour in the honey mixture. Gently mix until just combined, then incorporate the walnuts.
  • Fill the prepared muffin cups with batter, leaving a bit of room at the top. Top each muffin with a sprinkle of granola.
  • Bake until centers spring back when touched, about 20 minutes in the preheated oven.
